Kippers make a hearty breakfast served with poached eggs and some wilted spinach and some vine roasted cherry tomatoes.
They are good for you too, containing an abundance of omega 3 and omega 6 for bone and heart health, plus they’re packed with protein.
Grill
Cooking: Instructions: Place under a pre-heated grill Place the kippers on the foil, skin-side up, and add a knob of butter to the flesh side
grill for 6 minutes. Turn once. Until the butter is sizzling and the fish is heated through.
Pan-frying
For a richer flavor and slightly crispy skin, pan-frying is a quick option.
Heat butter or a drizzle of olive oil in a skillet over low to medium heat.
Place the kippers in the pan, skin-side down, and fry for 3–4 minutes.
Flip the kippers and cook for another 2–3 minutes until heated through. Baste the fish with the melted butter as it cooks.
Serve immediately with a squeeze of lemon and some freshly chopped parsley.
Microwaving
The microwave is the fastest method, perfect for a quick breakfast.
Place the kipper fillets on a microwave-safe plate.
Cover the plate with a microwave-safe lid or clingfilm to contain the odor. If using clingfilm, pierce it a few times to allow steam to escape.
Cook on full power for about 2–3 minutes.
Remove from the microwave and serve with a drizzle of olive oil and a squeeze of fresh lemon.
